Penne Fresca - Noodles and Company replica

So I tried to make their Mediterrian pasta dish, Penne Fresca. I think I succeeded. It actually tasted better and the wine wasn't so strong. Lexa and I also had spinach salad. We had different dressings because I didn't want ranch and she didn't want my Basil&lime juice infused with olive oil(which was AMAZING!!).

**All items can be store bought** So in order to make this dish, all you really need is a box of Penne pasta, one big tomato, half of a big red onion or a medium size red onion, about half of a bunch of spinach, olive oil, a couple cloves of garlic, black pepper, salt, parmesan cheese, white wine, and parley/basil.
Start of with boiling the water. You can rinse the spinach at this time. Once it's boiling cook Penne pasta for about 8 minutes. Let the pasta cook(the noodles aren't ready!!). While waiting you can mince the garlic, dice the tomato, and slice the red onion. Now with a medium size sauce pan pour about 3 tablespoons of olive oil into the pan. Heat the pan to simmer or a 2. Let the oil get a little hot. Once the oil is ready, put the garlic in. Cook it for about 20 seconds or when it's turning a little brown. Now you want to put the red onions in and start cooking that.
*Always stir and check noodles to see if it's ready. If it is, strain it and set it aside*
Cook red onions for about 2-4 minutes then add tomatoes. Sprinkle some salt and 1 1/2-2 tablespoons of white wine. Cook for another 2 minutes. Put about a handful of spinach in the pan with the red onions and tomatoes. Once the spinach turn a little softer, toss in the pasta and mix for another minute. Lastly add some black pepper and quickly toss. Once placed on a plate, put some parmesan cheese on top. Serve while hot because it's even more yummy. Makes about 6-8 servings. :D

Now my next attempt is with Penne pasta again. As in the previous blog I will try Penne with Aspargus and oven-dried tomatoes.

Lemon Pasta with Roasted Shrimp!

Was a total success. Although I was racing against time and trying to focus on what the professor was saying on the laptop. If I'd known that class was going to end at 1:40 I would've waited to make my pasta. I wasn't even that hungry. Oh it was so good though. The two flavors, roasted shrimp and tossed pasta, was quite the combination. I mean the flavorful shrimp kinda made the pasta seem a little plain but you could really taste the lemon in the pasta. I might have added a tad too much butter. I'll probably add less butter in my next attempt and probably a little bit more pepper for taste. I might add some herbs in it as well. It's so yummy and simple to make. Here's the recipe and I hope you enjoy!
